The secret is time: the meat cooks gently until it is tender while the skin crisps into crackling. Then it rests briefly before our chef carves. At midsummer, it is light in London until about 9:20pm, which gives a garden party a long evening. In late September it’s dark by about 7:05pm; add lights for the evening.
